Our second crack at this bad boy. The spec was; make a sauce that tastes like the Aussie seasoning staple, chicken salt. Packed with local lovage herb and a seasonal veg and fruit blend all smashed down with salt for 3 weeks. Blended with pure spirit vinegar, spiked with a touch of mushroom, veg & yeast extracts for that umami thwack and just a pinch of sugar for balance. It’s salty, tangy and very addictive. Should age out really well. Banger!
